Many a times we are unable to cook an elaborate and yummy breakfast, owing to the time constraints. It becomes a bigger issue especially if you have overnight guests to attend in the morning. In such times of despair the best possible option for us is to opt for something that is easy to cook and can be stored in batches in the freezer for future consumption.

If you are in search of some easy breakfast recipes, then look no further.  Try Drilldoggy’s  waffles that are simple to whip up and can be stored in freezer for several weeks. Just grab a number of these freezable waffles, reheat them in a toaster and get ready to feed the hungry crowd.

Though the basic ingredients make sure that the waffles are healthier than its authentic version, you can boost its nutrient quotient further by blending in fruits berries, apples or bananas into the batter. In case your pantry has run out of fruits, don’t fret! Just whip coconut milk until thick and creamier and serve alongside the waffles. A splash of honey jazzes it up further, so don’t miss it out either. No matter which topping you healthier.

Ingredients:

Serves: 4

  • 1 medium apple, peeled and cored
  • 1 medium banana, peeled and chopped into rough chunks
  • 2 medium eggs
  • 1 tbsp vanilla extract
  • 1 cup smooth almond butter
  • ½ tsp baking soda
  • 1 tbsp arrowroot powder
  • Melted coconut oil, for greasing

For the topping:

  • 1 tbsp honey
  • 1 can coconut cream

Method:

  • Dump the apple and banana chunks into a blender and pulse them into a smooth puree.
  • Whip the almond butter in a bowl for 3 minutes, using an electric mixer set at high, until its smooth out and turn fluffier.
  • Fold in the fruit puree and continue to whisk the mixture until fully incorporated.
  • Brush an 8’’x4’’ waffle maker with a lashing of melted coconut oil to grease.
  • Pour a ladle of batter onto it and cook with the lid closed, for 3-5 minutes until it browns.
  • Transfer it onto the serving plate and make rest of the waffles in a similar fashion.
  • To make the topping, whisk its ingredients together for 6 minutes or until well combined into a fluufy mixture,
  • Add a dollop of this coconut cream mixture onto each waffle and serve.
