Garlic shrimp scampi or shrimp in garlic sauce is ideal for those who prefer to keep their lunch light and healthy. It works ideal as a portable lunch for office-goers or people on the go as well. Top it on spaghetti squash and you are set to enjoy a lip-smacking meal!

The entire combination of prawns, herbs and garlic is a match made in heaven. A bout of white wine adds a hint of bold flavors to the dish and boosts its subtle aromatic goodness further. Yet it hardly takes 20 minutes to get ready. So go for it if you are in hurry or feeling too idle to whip up an elaborate meal.

Don’t worry if you are not fond of shrimps! Replace it with chicken and enjoy it without sacrificing the flavors a bit.

Ingredients:

Serves: 4

  • 1 lb raw shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • ½ red onion, diced
  • 1 lemon, quartered
  • ½ cup white wine
  • 1 tbsp fresh parsley, chopped
  • ¼ cup ghee or clarified butter
  • Salt and freshly ground black pepper to taste

Method:

  • Lay out the shrimps onto a pyrex baking dish and scatter the chopped onion over them.
  • Add the garlic and ghee into the dish and sprinkle a dash each of seasonings to taste.
  • Bathe them with a bout of white wine and place them within an oven, 6 inches below the heating coil.
  • Set the oven to broiler mode and broil for 5 minutes.
  • Turn over the shrimps and continue to broil for another 5 minutes or until the flesh of the shrimp turns opaque and white.
  • Top it onto spaghetti squash and squeeze in fresh lemon juice.
  • Serve warm.
