Shrimp Cocktail

The shrimp cocktail is prepared using exotic combination of horse radish puree, onion and chili sauce. While horseradish maintains the creamy goodness of shrimp cocktail, the chili sauce peps it up with a hint if fiery heat. Ingredients:
- 1 lb shrimp, shelled and deveined
- ½ tbsp horseradish puree
- 2 tbsp lemon juice
- 6 tbsp chili sauce (opt for one with minimal or no sugar)
- 1 celery stalk, finely chopped
- 1 tsp grated onion
- 2-4 lettuce leaves
Method:
- Fill a 2-quart pot with water and bring it to a boil.
- Drop in the shrimps and place a lid on top.
- Turn off the heat and allow the seafood to cook in hot water for 5 minutes, until their flesh turn opaque.
- Drain them out using a slotted spoon and wash under running water to cool them down right away.
- Spoon the horseradish puree, chili sauce as well as lemon juice into a medium bowl and whisk them together until well combined.
- Stir in the grated onion until evenly distributed and throw in the cooked shrimp.
- Sprinkle the chopped celery over them and give a stir to coat well.
- Spread out the lettuce leaves along the inner sides of the cocktail glasses to line and spoon in the mixture,
- Add more sauce on top to spice it up further and serve chilled.
