Busy days call for a ‘chomp-while-you-work’ meal and wraps fit the bill perfectly. They are easy to assemble, portable and satisfying at the same time. Since your new vows will not allow you to choose from flour tortillas or tacos, so use salad greens instead and make your own healthy wraps for quick lunch.

Radicchio doesn’t really come as an obvious choice when it comes to salad greens, owing to its slight bitter flavor. But trying out new elements in your meal is good for your body, especially for your digestive process. So give the lettuce and Collard greens some rest and pick radicchio instead for your salad wrap.

All you need is to work out a feasible way to cut down its bitterness and radicchio will taste as pleasant as other popular salad greens. This recipe uses the tangy zing of the citrus fruits to tone down the bitterness of these leaves and also includes cooked chicken to make it more filling as a meal. A hint of garlicky essence and basil leaves deliver an aromatic touch to the entire wrap and the resultant wrap is delicious, crunchy, light and super healthy.

Still not sure about radicchio? Okay, you can still go with the typical salad greens like romaine or butter lettuce, flat leaf kale or swiss chard. No matter which leaves you choose for your wrap, make sure that they are pliable yet sturdy and don’t get holes when wrapped.
Now let’s skip to the recipe.

Ingredients:

Serves: 1

  • 2 boneless lean chicken breasts, skinned, cooked and shredded
  • 1 orange, peeled, wedges separated out and rinds removed
  • 2 celery stalks, finely chopped
  • 2 tbsp fresh lemon juice
  • ¼ cup fresh basil leaves, finely chopped
  • 1 tsp minced garlic
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper to taste

Method:

  • Peel the leaves from the radicchio and dip them in cold water.
  • Set aside for a couple of minutes to soak and drain them out; pat them dry and set aside.
  • Toss the shredded chicken, chopped basil as well as celery into a medium bowl and stir them all together to mix well.
  • Whisk a splash of lemon juice, minced garlic plus a dash each of seasonings into the olive oil until well combined and drizzle it onto the chicken mixture.
  • Give them a good stir to coat well with the dressing and divide them equally among the radicchio leaves.
  • Place few orange wedges into each radicchio and wrap it up.
  • Munch and enjoy!
