Frittata is a fun and interesting breakfast dish that people seem to love . These are basically versions of the usual omelet but in this case the egg is more fluffy and tastier. The versatility is the best part in this dish. Sky is the limit when it comes to the ingredients used in frittata.

You need to whip up the ingredients in the raw egg, unlike omelet, in which the former are mixed on fire. Beat the eggs with a strong hand to make sure that it turns out to be fluffy and creamy. If you like your egg half done, then cook over slow heat till the base is set yet the top is still runny.

Also, as compared to an omelet this dish is divided into small pieces and served piping hot. Ingredients:

  • 10 eggs
  • 1 lb mild Italian sausage, skin peeled off
  • 4 green onions, finely chopped
  • 1 medium sweet potato, peeled and grated
  • 3 tbsp coconut oil
  • Freshly ground black pepper to taste

Method:

  • Drizzle the coconut oil in a large oven-proof skillet and heat it over moderate heat.
  • Crumble the sausage meat into the pan and cook for several minutes, while stirring often, until it browns nicely.
  • Scatter the grated sweet potato on top and continue to cook, while stirring at times, until the veggie softens.
  • Stir in the chopped green onion and cook further for another couple of minutes; pep it up with a dash of ground black pepper.
  • Spread it out into a single layer and set aside.
  • Beat the eggs thoroughly and pour it over the sausage mixture to cover completely.
  • Sprinkle more ground black pepper to season.
  • Cook over medium heat for 3 minutes or until bubbles pop up and the edges set.
  • Place in the oven and broil at low heat until the frittata is cooked through.
  • Slice and serve.
