Ingredients:

  • 12 eggs
  • 4-5 large tomatoes, cubed
  • 3 Zucchini squash, halved and sliced
  • Large fistful fresh basil leaves, finely chopped
  • 3 garlic cloves, minced
  • 1 small yellow onion, halved and sliced
  • ½ cup chives, finely chopped

Sea salt and freshly ground black pepper to taste

Method:

  • Drizzle oil in a large skillet and heat it over moderate heat.
  • Throw in the onion and sauté until they turn lucid.
  • Stir in the tomatoes, zucchini and garlic pieces and continue to cook until the tomatoes become mushy and start simmering.
  • Cook it further while stirring often until the sauce begins to turn thicker.
  • Stir in the basil along with a dash each of salt and pepper to season and make some space at points in the sauce with your spatula.
  • Crack the eggs into the holes and sprinkle the chives on top.
  • Lower the heat and cook, covered, until the white is set yet the yolks still remains somewhat runny; this should take about 5-8 of your time.
  • Scoop a couple of eggs onto each serving plate along with some of the sauce and serve warm.
