Cinnamon Raisin Bread

Healthy breakfast is not only about eating eggs and fruits every day. With lots of fitness substitutes around you, you can still enjoy breakfast just like your past days without cheating on your primal diet. Speaking of popular breakfast, breads have always played an important role in breakfast menus. But why stick to the regular, bland ones when you can bake a loaf of moist, spicy bread made of almond flour.

 

Cinnamon raisin bread is the first choice of Drilldoggy in this case. This cinnamon-laced bread, studded with raisins has enough sweetness to not require honey or sugary jam to go with it, yet subtle enough to pair with fruits. The heart-warming flavor of the cinnamon complements the sweetness of the raisins and makes your kitchen smell heavenly as the bread bakes. You can consider adding your favorite nuts into the bread too!

 

So whether you have them toasted and slathered with grass-fed butter or fry them into French toast, this healthy version of bread will prove to be your ideal ‘go-to’ breakfast.

 

Ingredients:

Yields: 10 bread slices

  • 2 cups almond flour
  • 5 eggs
  • ½ cup raisins
  • 1 tsp baking soda
  • 2 tbsp ground cinnamon
  • ¼ cup honey
  • 2 tsp pure vanilla extract
  • ¼ cup coconut oil
  • ¼ tsp sea salt

Method:

  • Warm up your oven to 350 degrees F.
  • Spread a sheet of parchment paper onto a loaf pan to line its sides and base; set aside.
  • Place the almond flour in a medium mixing bowl and stir in the baking soda, ground cinnamon and a dash of salt.
  • Crack the eggs into a separate larger bowl and pour in the coconut oil, honey and vanilla extract.
  • Blend them together with the help of your electric mixer until well combined.
  • Fold in the dry mixture and continue to beat them together using the mixer until mixed thoroughly into a uniform mixture without lumps.
  • Scatter the raisins on top and stir until evenly distributed.
  • Transfer the batter into the prepared load pan and bake in the hot oven for half an hours or until they are baked through.
  • Remove from oven and set aside until cooled completely.
  • Carve out semi-thick slices and serve with your favorite accompaniments.
