Summer has arrived! So, head to a park with your family and spread out the blanket to have a blast with your loved ones. Great company, fun games and lively music is a key to a great picnic. But what’s a picnic without a basket with delicious food? So to turn your picnic into a success, make a point to churn up yummy yet simple dishes, which can last for several hours and doesn’t call for any reheating.

Sandwiches, salads, burgers, snacks in sticks and fruit punches usually dominate the picnic menu owing to their versatility and portability. A health-freak Mom should particularly go for a salad as its gives a chance to make your kid eat veggies, fruits and other healthy food-stuffs in it and turn the summer picnic into a healthy affair. Raw veggie salad makes one such great dish which calls for your favorite veggies, fried bacon, almonds and fruits, smothered with simple yet decadent dressing of mayo and vinegar. The veggies add a crunch to the salad and blends well with the fruity tang of the berries as well as grapes. But it’s the bacon and creamy dressing which will entice your kids to give it a go and trust me – they will love it.

So time for some family bonding over an exciting summer picnic!

 

Ingredients:

Serves: 12

  • ½ cup green onions, chopped
  • 2 tbsp grated onion
  • 4 cups broccoli florets
  • 1 cup celery, chopped
  • 1 package (10 oz) frozen green peas, thawed
  • 1 cup red grapes, seedless
  • 1 cup green grapes, seedless
  • 1 cup dried cranberries, sweetened
  • 6 bacon slices
  • ½ cup almonds, slivered
  • 1 ½ cups fitness mayonnaise
  • ¼ cup honey
  • ¼ cup apple cider vinegar
  • 1 tsp salt

Method:

  • Fry the bacon in a hot skillet over moderately high flame until they crisp up and turn brown.
  • Drain them out into a plate and crush them once cool enough to touch; keep aside.
  • Dump the veggies, fruits, bacon and almonds into a large bowl and toss them together to mix well.
  • Place the mayonnaise in a separate bowl and beat in rest of the ingredients until thoroughly mixed.
  • Pour it onto the salad mixture and toss again to coat well with this dressing.
  • Pack it in a box and serve it during the picnic.
