Following a our dieting concept put a stop to your bread indulgence. But if you swear off bread and miss your bread sandwiches badly, then no worries. This recipe of plaintain bread makes a pretty convincing substitute for breads, without using a single speck of flour.

It’s really astonishing how only 3 ingredients can give rise to light, fluffy and of course yummy results. So make a loaf of plaintain bread ahead and store it in your pantry to whip up a quick lunch on busy days or simply soothe your sudden sammie cravings.

Avocado and bacon plaintain sandwich is one such quick lunch fixes which takes minutes to put them together and always treat you with lip-smacking and hearty outcome. Sandwiches are all about the harmony of different flavors and textures and this sandwich fits the bill perfectly. The creamy mashed avocado slathered on the plaintain breads paired with the savory crispness of the bacon is indeed a winner.

However, this recipe is just an inspiration to get you started on enjoying sandwiches while sticking to the rules of a healthy nutrition.

Ingredients:

Serves: 1

For the plaintain bread:

  • 1 whole semi-ripe banana, peeled and roughly chopped
  • 1 tbsp coconut oil
  • 4 eggs

For the sandwich:

  • 1 avocado
  • 6 bacon slices
  • 1 tsp fresh lemon juice

Method:

  • Preheat your oven to 375 degrees F.
  • To make the plaintain bread, dump all its ingredients into a blender and pulse them into a smooth batter.
  • Tip the contents into a pre-greased baking dish and bake in the hot oven for 20-25 minutes or until they are firm and baked through.
  • Remove from oven and set aside until cooled completely.
  • Carve out semi-thick slices and set aside until necessary.
  • Fry the bacons in a hot skillet until they turn brown and crispy.
  • Drain them out into a paper towel-lined plate to soak away the excess oil.
  • Slice the avocado into halves and remove the stone.
  • Scoop out the pulp into a bowl and mash them along with a splash of fresh lemon juice.
  • Spread half of it onto a bread slice and arrange 3 bacons on top side by side.
  • Place another bread slice on top and slather rest of the mashed avocado onto it.
  • Lay out rest of the bacon slices onto it and close the sandwich with the third uncoated bread slice.
  • Serve and munch away!
