Heirloom Tomato Salad
with Garlic Scape-Kale Dressing

Tomatoes and cucumber are common ingredients when it comes to tossing up a salad. But it’s the garlic scape and kale puree for dressing which sets the salad apart from others. In case you are unaware of garlic scapes, they are curly, somewhat wobbly stalk of garlic plants with milder flavors than the bulb. So if you don’t like the strong whiff of the garlic cloves, garlic scape will definitely win your heart and taste buds all at once!

Ingredients:

Serves: 6-8

  • 2 lb heirloom tomatoes, sliced into chunks
  • 4 garlic scapes, roughly chopped
  • 1 English cucumber, sliced
  • 2 large kale leaves, tough mid vein sliced off and coarsely chopped
  • 3 tbsp fresh lemon juice
  • 6 tbsp extra virgin olive oil
  • ¼ tsp freshly ground black pepper
  • ½ tsp sea salt

Method:

  • Dump the cucumber and heirloom tomatoes into a large salad bowl and set aside.
  • Toss the garlic scapes and kale into a food processor and pulse them for several minutes into a coarse puree.
  • Pour in a lemon juice and drizzle oil into it.
  • Sprinkle a dash each of seasonings and pulse further for another couple of minutes or until it forms a smooth puree.
  • Scrape out the dressing over the veggies and toss them together to coat well.
  • Serve right away
