This recipe is for those nights when you suddenly friends burst into your house for a pleasant surprise and you don’t have anything ready in their kitchen to greet them with. So you need a simple recipe which needs simple ingredients available in every kitchen, calls for minimal prepping and gets ready minutes. This means that you get loads of time to have fun with your buddies yet don’t starve them.

Sesame soy chicken could be a perfect choice in this case. The core ingredient, chicken, is often lurking in your refrigerator. So stir up a delicious marinade and soak the chicken morsels in it for just half an hour. More time to be with your friends! After the prepping time over, simply chuck those into the pan along with rest of the ingredients and stir fry them for several minutes. Your home-made Chinese stir-fry is ready to be woo your surprise guests!

This dish features and cocktail of tangy, salty and nutty (thanks to the sesame seeds!) flavors and gives you great company over funny chitchats with buddies. So all you need is to invest a little more time to blanch some crunchy veggies as well as steam up cauliflower rice to go with the stir-fry and you are ready to serve a filling dinner to your guests.

Ingredients:

  • 2 (4 oz) chicken breasts
  • 2 tsp sesame seeds
  • 1 garlic clove, crushed
  • 2 scallions, thinly sliced
  • 2 tbsp coconut aminos
  • 2 tbsp fresh lime juice
  • 2 tsp canola oil
  • ½ tp ground ginger
  • 1 tsp sugar
  • ½ cup water

Method:

  • Pour the coconut aminos and lime juice into a Ziploc bag and stir in the sesame seeds, garlic clove, ground ginger, sugar as well as sliced scallions until well combined.
  • Stuff the chicken breasts into the bag, seal and give it a nice shake to coat well with the marinade.
  • Set aside in the fridge for half an hour to marinate.
  • Drain it out onto a plate and dab with paper towels to blot dry; save the marinade for latter.
  • Heat a lashing of oil in a skillet over moderately high heat and lay out the chicken on top.
  • Cook each side for 3-4 minutes or until it turns golden brown and cook the other side in a similar fashion.
  • Pour the reserved marinade over the chicken, followed by a large splash of water and place a lid on top.
  • Reduce the heat and bring it to a simmer.
  • Cook for 10-12 minutes or until they are cooked through and turn off the heat.
  • Dish out a chicken breast onto each serving plate and drizzle the sauce over them.
  • Serve right away.
