Sweet Scramble

 

 

We all have would have consumed scramble eggs now and then for breakfast and by now got bored of the same. So it’s time to chuck the plain Jane egg scramble and spice it up just the way Drilldoggy likes it.

In this jazzed up version of egg scramble, the eggs find the sweet company of sweet potatoes and a hint of fiery heat from the jalapenos. Sounds yum, isn’t it? Mornings often makes you go for minimal prep work, owing to the lurking drowsiness. So feel free to leave the seeds in the jalapenos if you can handle the heat and keep the sweet potatoes unpeeled. Apart from saving you from hassles, the skin will ensure that you start your day with an extra dose of fibers. Being lazy does have its perks at times! You can splash in some coconut or soy milk to fluff up the curdled eggs further and turn your breakfast into a yummy treat.

Be creative when it comes to serving the sweet and spicy egg scramble. You can sauté up all the ingredients together or arrange a bed of plain scrambled egg and top it up with sweet potato saute. If you find both the ideas appealing, then why not try it back to back and enjoy all new flavors of eggs.

Ingredients:

Serves: 2

  • 4 eggs
  • 1 red onion, peeled and sliced thinly
  • 1 jalapeno, diced
  • 1sweet potato, diced
  • Sea salt and freshly ground black pepper to taste
  • Coconut oil, for frying

Method:

  • Heat a skillet over moderate flame and grease it with few drops of coconut oil.
  • Toss in the veggies and stir fry for several minutes over slow flame, until the onion slices caramelizes and the sweet potatoes turn fork-tender.
  • Stir in the chopped jalapenos and continue to stir fry for another 5 minutes; adjust the seasonings.
  • Crack the eggs in a separate pan and scramble until the lumps of eggs are set.
  • Spread this egg scramble onto the serving plates and spoon the sautéed mixture on top.
  • Sprinkle a dash of ground pepper on top of each serving and serve without delay.
  • Dig in!
