Rotisserie Chicken Salad
Salads can be a great option for kid’s lunchboxes. But do you often find them complaining of the salad turning limp by the time they are about to have it? Blame it all to the dressing! The salad ingredients usually absorb the dressing and thus lose their crunch.
Drilldoggy has been trying to solve this common problem and has finally come up with a brilliant yet ‘too obvious to be true’ idea for the Moms out there. Take a cue from this simple recipe of Rotisserie chicken salad – a name which can make both kids and adults drool. The rotisserie chicken shreds tossed with carrots, tomatoes, avocado and salad greens make a filling lunch which can keep your kids going throughout the day. But it’s the simple dressing which does the trick of keeping it fresh and healthy after hours of being tossed up. Drizzle the salad with a lashing of delicious tangy dressing and pack them into the lunchbox along with a small box of salt by the side. All your kid needs to do is sprinkle the salt and give a stir to coat well. The salad will be full of crunch- just the way they like it!
In case, your kids are over 8-10 years old, you can also add a couple of thick bread slices, so that they can make their own sandwiches. And you can take this salad to work too!
Ingredients:
Serves: 4
- ½ cup olive oil
- 2 tsp sesame oil
- 1/3 cup fresh lime juice
- Salt and freshly ground black pepper to taste
For the salad:
- 2-3 cups rotisserie chicken, shredded
- ¼ head green cabbage, shredded
- 1 small head romaine
- 2 carrots, grated
- 2 avocados, halved, stoned and diced
- ½ cup cilantro leaves, finely chopped
- 2 tomatoes, chopped
Method:
- Whisk the all the dressing ingredients, except salt, into a small bowl until well combined and set aside.
- Dump all the salad ingredients into a bowl and drizzle the dressing over them.
- Toss to coat well and pack them into the lunchboxes.
- Sprinkle the salt just before having them and enjoy!
