A week day meal full of hassles! We are hardly left with any spare time to plan our meal and look for healthy ingredients to make the lunch nutritious. No wonder more than often, we give into temptation and end up opting from junk food from the nearest fast food joint. As a result, instead of undergoing weight loss we end up blowing up our waistline!

Though the juicy stir-fried chicken taste wonderful, it’s the pineapple chunks which will bring a smile on your face with their tangy-sweet flavors. You can improvise on the dish and throw in more veggies to boost the nutrition quotient of the dish. Though the Japanese would have loved to eat it with steamed rice, your nutrition concept won’t allow you to do so. So stick to cauliflower rice or enjoy it with a bowl of fresh salad as well.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, sliced into 1’’ strips
  • 1 cup pineapple, diced
  • 1 medium yellow onion, diced
  • 3 romaine hearts
  • 1 medium red bell pepper, diced
  • ¼ tsp freshly ground black pepper
  • ¼ tsp sea salt
  • 1 tbsp coconut oil

Method:

  • Sprinkle a dash each of seasonings all over the chicken strips and toss to season.
  • Drizzle coconut oil in a large skillet and heat it over moderately high heat until it shimmers.
  • Throw in the chopped onion as well as the seasoned chicken strips and sauté them for 5 minutes, while stirring from time to time.
  • Pour in coconut aminos and continue to stir fry for another 5 minutes.
  • Stir in the pepper as well as pineapple chunks and sauté the mixture until veggies are crisp-tender while the chicken is cooked through.
  • Arrange a bed of chopped romaine onto four serving plates and pile up the stir-fried mixture on top.
  • Serve right away and tuck in!
