Chinese take-outs are often our only way out to enjoy Asian fare. But MSG, soy sauce, rice/wheat noodles etc make these a strict no-no for a healthy lifestyle. But that doesn’t mean you need to forget your chopstick skills. Chinese food is something which can be easily morphed to make it fitness-friendly and gets ready in a flash. And the fact that exotic ingredients are a must-have for Chinese cooking is a myth. Simple ingredients, readily available in your kitchen are enough to make you enjoy a slice of China right at the comfort of your home.

Speaking of easy Chinese dinner, nothing could be simpler than cooking a stir fry. Just toss in some common veggies or meat (or both!), add a dash of hot sauce or coconut aminos and saute them to perfection. Start your Weight Loss-Chinese journey with chicken-pepper stir fry. The peppers in varied colours of yellow, green and red turn your dinner into a vibrant affair and add a playful crunch to the dish. It pairs nicely with the juicy shredded chicken and a dash of red pepper flakes pep things up! In case, you want your dinner to be more nutritious, feel free to throw in more veggies like bok choy, broccoli or zucchini into the stir fry – the possibilities are endless.

Ingredients:

Serves: 3

  • 3 boiled chicken breasts, shredded
  • 1 red bell pepper, stemmed, deseeded and sliced
  • 1 green bell pepper, stemmed, deseeded and sliced
  • 1 yellow bell pepper, stemmed, deseeded and sliced
  • 1 tbsp coconut oil
  • 1 tbsp coconut aminos
  • ½ tsp red pepper flakes
  • Sea salt and freshly ground black pepper to taste

Method:

  • Heat the coconut oil in a wok or sauté pan over moderate flame, until it starts shimmering.
  • Throw in the sliced bell peppers and stir fry them for 5 minutes or until they turn crisp-tender.
  • Stir in the shredded chicken until well combined and add a splash of coconut aminos.
  • Sprinkle a dash each of red pepper flakes, sea salt as well as ground pepper and stir them all together to mix well.
  • Stir fry them further for several minutes or until the chicken is heated through and transfer it into a serving bowl.
  • Serve hot with cauliflower rice.
